Uptown Meatloaf
Ingredients:
- 1 1/2 lbs. ground beef
- 2 eggs, lightly beaten
- 1 1/2 c. bread crumbs
- 1/2 c. fresh parsley, chopped
- Fresh mozzarella, cubed
- 1/2 medium onion, diced
- 3 cloves garlic, minced
- 3 oz. (about 1/2 c.) sundried tomatoes
- 1/2 c. ketchup
- Splash of white wine (optional)
- Preheat oven to 350 degrees. Spray a pan with nonstick cooking spray and set aside.
- In a large bowl, combine all ingredients then mix with your hands.
- Place mixture into pan and spread evenly, then roll both sides in jelly-roll style.
- Bake for 1 hour, then remove and turn off oven, sprinkle cheese of choice over the top (I picked Parmesan), then place back in the oven till cheese is slightly melted.
